QUICK LIGHT CAKE

Well seeing it's rhubarb season again I figured I would post another rhubarb recipe.
You can use other fruits for the bottom, but my hubby likes rhubarb the best.
It's a little bit tart, therefore not my favorite, but if you like your food a little more pucker upish, this one's for you.


rhubarb

2 eggs
cream

1 cup sugar
1 1/2 cups flour
3 tsp. baking powder

Line bottom of lightly greased 9x12 cake pan with rhubarb
Put eggs in 8 oz measuring cup
Fill remainder of cup with cream
Beat lightly
Mix together sugar, flour and baking powder
To flour mix add cream mixture (add more cream if mixture is not thin enough to spread over rhubarb)
Pour batter over rhubarb
Bake at 375F until toothpick comes out clean

That sound yummy! Ok and I saw the canning and the jams. I'd really like to make strawberry ...any recipes or ideas on that one, I haven't done it.
