1 cup margarine
2 cups brown sugar
2 eggs
1 tsp vanilla
2 cups spelt flour (you can also use whole wheat flour)
1 tsp baking powder
1/2 tsp baking soda
2 cups oatmeal
1 cup chocolate chips
-Add margarine and brown sugar in mixer, beat well.
-Add eggs, beat well.
-Add rest of ingredients (except chocolate chips) mix until just combined.
-Mix in chocolate chips.
-Drop into greased cookie sheet.
-Bake @ 375F for 15-20 minutes or until just browned (if using whole wheat flour bake a little less, they are a little dryer).

Wow what an interesting co-incidence! I was just thinking of making some gluten-free oatmeal-chocolate-chip cookies. Ideas from the farmers market where I was, doing my business. So, now I have something to go by. Not sure if this is allowed but here is my website. If it works well, may I post that recipe?

(I plan to use the all-purpose-gluten-free flour for the flour, and rolled cavena nuda as the oatmeal)
