Double Chocolate Chunk Cookies Made With Spelt Flour

We made these cookies last night and Mrs. Penner requested them so here they are.
(They are great by the way:)

1 cup spelt flour
2 tbsp cocoa powder
1 tsp baking powder
1/2 tsp salt
2 3/4 cup dark chocolate chunks (we used chocolate chips)
2 tbsp unsalted butter
1 egg plus 2 egg whites
1/2 cup brown sugar

-Set oven to 350 degree F. Spray cookie sheet with cooking spray and set aside.
-Melt 2 cups of the chocolate chunks and the butter in a double boiler. 
-Once melted, remove and allow to cool to the touch.
-While the chocolate is cooling, combine spelt flour, cocoa powder, cinnamon, baking powder, and salt.
-To the melted chocolate, mix in the sugar followed by the egg and egg whites.
 -Add the flour mixture and combine well. Fold in the remaining 3/4 cup of chocolate chunks.
-Scoop two tablespoon mounds unto the prepared baking sheet, and press down lightly to create a mound with a flat top. 
-Bake at 350 degrees F for 15 minutes. 
-Cool completely on wire racks before serving.
-Makes 15-20 cookies

Oh good! Something I can make with spelt :) I have some sitting here, and after my attempt at Spelp bread, I wanted to use it for something else! Do you use spelt a lot?

We havn't quite figured out spelt bread either but are working on getting a recipe.
Yes, we just recently figured out that I (Kerri) am allergic to gluten, so we have been experimenting alot.
I am sure I will be posting many more spelt recipes in the near future!

Hi Kerri, just noticed that you replied to my comment! Sorry to hear that you are allergic to gluten :( That eliminates all wheat, doesn't it? I would have a real hard time leaving out wheat.
