Fettuccine Alfredo

Homemade Pasta
2 cups flour
1/2 tsp. salt
2 large eggs
1/4 cup water
1 tbsp. olive oil (or veg. oil)
4 1/2 quarts water


- Mix flour and salt in medium bowl.
- Make a well in center of flour mixture.
- Mix in eggs, 1/4 cup water and oil thoroughly. (if dough is to dry, mix in a few drops water; if dough is to sticky, mix in a small amount of flour)
- Gather dough into a ball.
- Knead on floured surface about 5 min. until smooth and elastic.
- Divide dough into 4 equal parts.
- Roll one part at a time into paper thin rectangle on generously floured surface (keep remaining dough covered).
- Loosely fold rectangle lengthwise into thirds.
- Cut crosswise into 1/4-inch strips.
- Unfold strips and place in single layer on towels.
- Let stand at least 30 min. until dry.
(if using pasta machine, pass dough through machine until 1/16 inch thick.)
- Heat 4 1/2 quarts of water (salted if desired) to boiling in large pan.
- Add pasta, boil uncovered for 3-5 min. or until firm but tender, drain.
- Begin testing for doneness when pasta rises to surface of water.
*if using self rising flour omit the 1/2 tsp. salt.


Alfredo Sauce
1/2 cup margarine or butter
1/2 cup (heavy) whipping cream
3/4 cup grated parmesan cheese
1/2 tsp. salt
Dash of pepper


-Heat margarine and whipping cream in 2-quart saucepan over low heat, stirring constantly until margarine  is melted.
-Stir in cheese, salt and pepper.
