Whole Wheat Bread

This is our lunch staple.
We always try to have loaves handy in the freezer.
It's amazing how much more filling it is than white
or bought bread!

Ingredients:
4 1/2 cups warm water
1 cup oil
3 eggs
3/4 cup honey

7 1/2 cups freshly ground whole wheat flour
1/2 cup flax (ground)

6 tsp salt
3 tbsp yeast

7 1/2 cups (approx.) freshly ground whole wheat flour

Method:
- Mix liquids in mixer
- Add flax and first amount of flour
- Sprinkle in salt and yeast
- Add rest of flour 1 cup at a time until dough pulls away from sides. (add more flour if dough is too sticky)
- Knead for 5-9 minutes (check Duggar Rolls for Bosch method)
- Grease pans, shape and evenly put into bread pans.
- Let rise for approximatly one hour (done when you stick your finger lightly in the dough and indentation stays there)
- Bake @ 325 degrees for about 19 minutes.

How many loaves does this recipe make? You must have a pretty big mixer if you can make that much dough at once! My Kitchen Aid is definitely too small to handle that!

This recipe makes 5 nice sized loaves. I have a Bosch machine that fits it all in :) I wouldn't trade it for any other mixer.

i know you are super busy, but i am receiving a WonderMill in a few days and am overwhelmed with how to make the bread, what berries to buy, etc. I will be kneading by hand, which is fine, because I only have a sunbeam mixer. any advice for a first timer???

Liz, we use hard red wheat berries...mostly because that's what we grow around here. The important thing about mixing fresh ground whole wheat flour is that the gluten is developed enough before you form it into loaves. To test the gluten roll a little bit of dough in a ball and then take a serrated knife and cut through the dough. If it rolls away from the knife the gluten is developed and you should come out with a nice loaf of bread! We don't have a lot of experience of mixing by hand so I am not much help in that area...sorry. But I don't think you do much different than bread with bought flour. We have tried many recipes and have found this one to be the best for us. Hope this helps.....don't give up if it doesn't work right away....you will get the hang of it! The bread is so much more tasty and healthy it is definitely worth it!!!!

Sorry Liz, I havent done much research on that because we just use the kind of wheat that we grow. I'm sure there must be some great info on the Internet if you have some time to look it up though. Hope you get it figured :)
