THIS ONE TAKES A LITTLE TIME BUT IS WORTH IT :-)
1st layer
1 cup butter or margerine
2 cups flour
2 tsp. sugar
2nd layer
4-5 cups rhubarb
2 cups sugar (I use less)
1 cup cream
6 egg yolks (save whites for topping)
4 Tbsp. flour
¼ tsp. salt
3rd layer
6 egg whites
¾ cup sugar
2 tsp. vanilla
Combine 1st layer ingredients, press into 9x12 cake pan & bake for 10 minutes @ 375F.
Mix 2nd layer ingredients and put on top of baked crust, bake @ 350F for 45 minutes.
Beat together 3rd layer ingredients until stiff.
Put on top of dessert & bake @ 325F for 10-15 minutes or until browned.
Cool before serving.

Mmm, I love rhubarb desserts! I would love to make this recipe, but Rhubarb doesn't grow very well in the South...
