In an attempt to use less white flour we have been trying out a few new whole wheat recipes. Now when I say this, I mean whole, whole wheat. NO white flour. I get so frustrated with recipes that say they are whole wheat but yet have half white flour. What's with that? So in the next few days we will be posting some of our favorite 100 % Whole Wheat recipes.
When we looked at this recipe we wondered how a chocolate chip cookies could even taste good without white flour. But we were pleasantly surprised with the result. They are definitely chewy and very yummy. The only problem was that they were a little flat. So we might try something a little different next time.....if so I will fix the recipe :)
3 cups whole wheat flour (we used freshly ground)
1 ½ tsp. baking powder
1 tsp. baking soda
1 ½ tsp. salt
1 cup butter or margerine
1 cup lightly packed dark brown sugar
1 cup sugar
2 large eggs
1 tsp. vanilla extract
Chocolate Chips (however many makes you happy :)
Preheat to 350°F.
Combine the flour, baking powder, baking soda, and salt in a medium bowl, and whisk to blend.
In a mixer, mix butter and sugar for about 2 minutes.
Add the eggs one at a time, beating well after each addition.
Beat in the vanilla.
Add the flour mixture and blend on low speed until the flour is just mixed.
Stir in the chocolate chips, and mix on low speed until evenly combined.
Put onto greased baking sheets.
Bake the cookies at 350F for 16 to 20 minutes, until the cookies are evenly browned.
