Meat Loaf

2 lbs. hamburger
1 cup rolled oats
1 cup milk
1 egg
1 pkg. onion soup mix


Sauce:
6 tbsp. brown sugar
1/2 cup ketchup
2 tsp. dry mustard

-Mix all meat ingredients together
-Place in casserole dish
-Mix sauce ingredients and pour on top of meat
-Bake @350F for 1 hour

Mandarin Orange Salad

Large head of green lettuce, rinsed and torn into bite-sized pieces
3 green onions, sliced finely on the diagonal
1 can (284 ml) mandarin oranges, drained


Dressing:
1/4 cup olive oil
1/4 cup slivered caramalized almonds
2 tbsp balsamic vinegar
1 tbsp sugar
1/2 tsp salt
Almonds



-Prepare the lettuce and combine with the green onions, oranges and the roasted almonds in a bowl. 
-Add dressing
-Chill for about an hour before serving, remix dressing before tossing with the salad

Dressing:
-Combine olive oil, balsamic vinegar, sugar, salt and pepper. 

Caramelized Almonds:
-Put tablespoon sugar in a heavy skillet.
-Add almonds, stir constantly over low heat until sugar melts, turns brown and collects on almonds.
- Remove from heat and break apart in small pieces

-Mix it all together

Bubbat Bread

4 eggs
2 cups milk, scalded
1 tsp salt
1/2 cup water
5 cups flour
1 Tbsp instant yeast
4 cups cut up (in bite size pieces) farmer sausage and/or smoked ham.


-Scald milk and add salt. Allow to cool to “warm” Add warm water.
-Beat eggs well, add to milk mixture.
-Add half of flour.
-Sprinkle in yeast.
-Stir in sausage or ham.
-Spread into greased 9X13 pan and 1 loaf pan, or all of it into a larger cookie sheet.
-Cover with plastic and let rise 1 hour.
-Bake at 350F for 45 minutes.

Week 6

Monday - Chicken, Mashed Potatoes, Carrots, Lettuce Salad
Tuesday - Barbecued Farmer Sausage, Scalloped Potatoes, Broccoli Salad
Wednesday - Beef Barley Soup, Bubbat Bread
Thursday - Chicken Roni Casserole, Coleslaw
Friday - Meat Loaf, Mashed Potatoes, Corn, Apple Sauce, Orange Mandarin salad
Saturday/Sunday - Chicken Tortillas, Chow Mien Noodle Salad

Mushroom Scalloped Potatoes

4 cups raw potatoes (thinly sliced)
1 tbsp flour
1 tsp. salt
1/8 tsp. pepper
2 tbsp. butter
1 can mushroom soup
1 can milk
onion

-Mix flour, salt, and pepper together
-Place a layer of potato on bottom of casserole dish
-Next place a layer of onion
-Sprinkle 1/2 of flour mixture on top
-dot with 1/2 of butter
-Repeat
-Mix milk and soup together in bowl
-Pour over potatoes
-Bake @350F for 30 min. covered and 45 min. uncovered (or until potatoes are soft)

Pizza Pops

Dough:
4 eggs
1 1/3 cups warm water
1 cup oil
1 tsp. salt
1 tsp. baking soda 7-8 cups flour


Filling:
Chopped ham (or whatever meat)
1 can tomato soup
1 can tomato paste
1 cup pasta sauce
340 .g mozzarella cheese grated



-Mix dough as you would bread dough
-Cover let rise one hour
-Mix all filling ingredients together
-Roll dough to 1/4 in. thickness and cut in large circles
-Place 1 tbsp. filling in center of circle, fold in half
-Press together edges with fork
-Deep fry in oil until golden brown
-Can be eaten fresh or frozen and reheated.


7 layer salad

Whole Wheat Italian Herb Bread

1/2 cup warm water
1/2 cup milk
1 TBSP oil
1 egg
1 tsp salt
1 1/3 TBSP honey
1/4 tsp garlic powder
1/4 tsp. Italian seasoning
1/2 tsp. oregano, dried
1/2 tsp basil, dried
1/2 tsp thyme, dried
2 tsp yeast
3 1/2 cups whole wheat flour

-In mixer mix liquid ingredients.
-add half of flour. Beat well
-Sprinkle in yeast, salt and spices.
-Add rest of flour until dough pulls away from sides of bowl
-Let rise to develop the flavor of the herbs.
-Bake @ 350 for 30-35 minutes or until bread sounds hollow when tapped.

Taco Soup

4 lbs hamburger
2 onions chopped
2 pkgs. taco seasoning mix
1 tsp. garlic powder
3 cups frozen corn 
 11/2 cups water
1 large can tomatoe soup (3-4 small ones)
1 jar blended tomatoes
Taco chips
Cheese

-In large pot brown hamburger and onions. -Drain
-Add taco seasoning and garlic powder
-Simmer according to pkg. instructions
-Add soup, tomatoes, corn and water
-Heat until corn is cooked
-Serve with nachos or taco chips, grated cheese and sour cream

7 Layer Meal

Layer 1- 10 thinly sliced potatoes/sprinkle with salt.
Layer 2-2 large chopped onions
Layer 3- 8 large thinly sliced carrots
Layer 4- 1 cup uncooked rice
Layer 5- 2 pkg. peas
Layer 6- 4lbs hamburger cooked, seasoned, and drained
Layer 7- 6 cans tomato soup + 6 cans water

-Put all ingredients in order in a roaster pan. 
-Bake @ 350F for 3 or more hours.
Edit: I recently started cooking this in two 9x13 pans, this way it cooks more evenly and tastes MUCH better!

Oven Fried Potatoes

8 lg. potatoes, washed, unpeeled

1/2 c. oil
1/2 tsp. garlic powder
1 tsp. oregeno
Grated cheese

-Wash potatoes and cut into 8 wedges.

-Mix remaining ingredients together.
-Arrange potato wedges, peel side down in shallow baking pans.
-Brush oil mixture over potatoes.
-Bake at 375 degrees for 45 minutes until golden brown and tender.
-Brush occasionally with oil mixture.
-If more brownness is desired, broil for 2 to 5 minutes.
-Top with grated cheese, return to oven to melt cheese.

Broccoli Salad

2 small or 1 big head of broccoli
1 small onion of onion greens (optional)
1 cup raisins
8 slices bacon (optional)
1/3 cup slivered almonds


Dressing:
1 cup mayonnaise
2 Tbsp vinegar
1/3 cup sugar

-Mix together first 5 ingredients
-In separate bowl mix dressing ingredients
-Mix together

Hawaiian Style Farmer Sausage

1 ring farmer sausage (about 1 1/2 pounds), sliced in 1/2 inch pieces

2 stalks celery, sliced
1 large onion, sliced
1 green pepper, cut in chunks
1 red pepper, cut in chunks
1 cans tomato soup
1 can tomatoes
1 can pineapple chunks or tidbits (398 ml / 14 oz), drain and reserve juice
1 teaspoon garlic salt
1 tablespoon brown sugar
1 tablespoon soy sauce
2 tablespoons cornstarch

-Slice farmer sausage into chunks. Cook in oven

-In a frying pan add to farmer sausage drippings, celery, onions, and peppers and cook until tendercrisp.
-Add tomatoes, soup, pineapple, seasonings, sugar and soy sauce. Simmer 5 minutes.
-Blend cornstarch with reserved pineapple juice. Add to simmering sausage dish and cook for 2 minutes.
-Serve on a bed of rice.

Chicken Noodle Soup

4 cups cut up chicken
20 cups water
Chicken oxo to taste
2 chopped onions
5 carrots(cubed)
3 stalks celery (cut into small pieces)
2 tsp. parsley flakes
2 tsp. salt
Spaghetti or your choice of noodles

-Put all ingredients, except for chicken and noodles in pot
-Bring to a boil add chicken and simmer for 30 minutes
-About 30 min to 1 hour before serving, add noodles
-Cook until noodles are tender
-SLURP IT UP!!

French Bread (Garlic Bread)

This is the recipe we have always used but last time we tried making garlic bread with Whole Wheat Bread and it tasted GREAT!

3 cups water

1/3 cup oil
1 Tbsp. sugar
1 Tbsp. salt
8 1/2 cups flour
3 Tbsp. yeast
1 egg (beaten)

- Put all ingredients except yeast, egg, cornmeal, and 3 1/2 cups flour in bosch

- Knead in low speed
- Sprinkle in yeast and add remaining flour 1 cup at a time until dough pulls away from side
- Knead on higher speed (very stiff watch bowl!!!)
- Knead for five minutes
- Shape into 4 loaves, place in cookie sheet let rise.
- Brush with egg
- Bake @ 400F for 20 min.
We cut the loaves in half, spread butter mixed with Garlic Plus on top and bake on 400F till browned

Spaghetti and Meat Sauce


3 lbs. hamburger
2 cans tomato soup
Sprinkle in garlic powder
2 bay leaves
2 stalks celery
2 tsp mustard powder
1 med. onion
Seasoning salt
About 1 cup pasta sauce
About 1 cup water

-Brown hamburger

-Add seasoning salt, brown onions and cook celery
-Drain grease
-Add tomato soup, garlic powder, water and pasta sauce to make desired consistency
-Simmer
-Boil water and cook 2 handfulls of spagetti with 2 tbsp of oil

Week Four

Monday - Chicken, Mashed potatoes, Corn, lettuce salad
Tuesday - Spaghetti, French Bread, Salad
Wednesday - Chicken Noodle Soup, Flat Bread
Thursday - Hawaiian Style Farmer Sausage, Rice, Broccoli Salad
Friday - Barbequed Steak, Oven Fried Potatoes, Peas, Applesauce, Chow Mein Noodle Salad
Satuday/Sunday - Pizza, Raw Veggies

Seven Layer Salad

We had this salad yesterday and it is SO good, you oughta try it!:)

6 cups chopped lettuce
salt
6 hard-cooked eggs, mashed
2 cups frozen peas, thawed
8 to 16 ounces bacon, crisp-cooked, drained, and crumbled
2 cups shredded mild Cheddar cheese
1 cup mayonnaise
1 to 2 tablespoons sugar

-1/4 cup sliced green onion with tops
-Place 3 cups of the lettuce in bottom of large bowl; sprinkle with salt.

-Layer egg over lettuce in bowl and sprinkle with more salt.
-Continue to layer vegetables in this order: peas, remaining lettuce, crumbled -bacon, and shredded cheese, along with light sprinklings of salt.

-Combine mayonnaise and sugar; spread over top, spreading to edge of bowl to cover entire salad.
-Cover and chill 
- Garnish with green onion.
-This salad serves 12 to 15.

Taco Salad

Well we don't really have a written out recipe for this one but I will do my best:)

Lettuce (cut up)
Hamburger (cooked, seasoned and drained)
Grated Cheese
French Dressing
Nacho chips

-Mix first 3 ing. together
-Right before seving add dressing and chips

Quick Biscuits

2 cups flour
3 tsp. sugar
2 tsp. baking powder
1/2 tsp. salt
4 Tbsp. cream OR 1 Tbsp. shortening
1 cup milk



-Mix all ingredients together well. Add more milk if to thick. Should be a stiff dough but still able to drop by spoon.
-Drop on cookie sheet
-Bake @ 350F until done (about 8-10 minutes)

Stew



Roast Beef
1 onion
Carrots
Potatoes
Seasoning Salt
Flour
Beef oxo seasoning

-Cut all veggies into bite size pieces
-Place first 5 ing. in large roaster
-Add and enough water to make runny
-Cook for 2 hrs. @ 350F until veggies are soft
-Add enough flour (mixed with water to make a paste) to stew to make thick
-Add beef oxo to taste.
-ENJOY!
